- 1-2 lbs. cube steak
- 2 green bell peppers
- 2 red bell peppers
- 1 onion
- 2 cans Italian style diced tomato in juices
- 1 cup flour
- salt and pepper to taste
- 2 eggs
- 2 tablespoons olive oil
- Cut steaks in half
- In a skillet, heat olive oil until sizzling
- In a large bowl, mix the dry ingredients
- Dredge steaks in egg and flour mix
- Sear steaks in olive oil until golden brown, remove
- Place steaks in crock pot between layers of sliced bell peppers, sliced onion and tomatoes
- Cook, covered on high for 4 hours or on low for 2-3 hours until steaks are fork tender
- Serve over homemade mashed potatoes
