Jams/Preserves?

Excuse my being a newbie- though I know the actual sealing to put them up would need to be done with a pressure cooker, but does anyone have any good jam/preserves recipes for the crockpot? Either in a jar with a water bath, or to simmer and jar later in a smaller pot?

I like to make it right in the crock pot because it allows me to smell it as it cooks. I recently found a website with a ton of recipes and tips.

I usually make fruit preserves in a boiling water bath, myself-- but that's just my opinion. I just mix the fruit, honey, and lemon zest then let it sit for an hour. Then seal it up in boiling water.

Peach would be great! My grandmother used to make a watermelon preserve, but I cannot find the recipe for the life of me in her old books. If you could "point" me in the right direction, that would be amazing!

Any fruits, really. I'm not big on berry jams/preserves normally (strawberry being the exception), but we have an amazing local Farmer's Market that is opening soon, and I can't wait to make some goodies!

Here is a peach crockpot jam recipe you might want to try!

Crockpot Peach Jam

8 large peaches, slightly underripe
1/4 c. lemon juice
2 oz box of powdered pectin
3 c. sugar

Peel peaches and remove pits. Crush peaches using potato masher. Combine peaches and lemon juice in slow cooker. Then, sprinkle with powdered pectin. Let stand for 20 minutes then stir in sugar. Cover slow cooker and cook on low for approximately two and one-half hours. Stir at one hour and two hours.

Remove the crockpot lid and allow to cook for approximately two more hours on high. This is a pretty easy recipe and you can adjust the amount of sugar used if needed.
