Ingredients:
Lay chicken evenly on bottom of slow cooker. In a medium bowl, mix together all other ingredients except for cornstarch and pour evenly over chicken. Cook on low for 6 hours.
Remove chicken carefully from slow cooker and place on a cutting board to cool. Whisk together the cornstarch with ¼ cup of cold water in a small bowl.
Put the slow cooker liquid and cornstarch water mix in a medium pot over medium heat. Cook for 5-10 minutes, whisking occasionally until sauce is thickened.
While, sauce cooks, shred chicken.
Once sauce is cooked, mix with chicken. Serve!

- 3 pounds boneless, skinless chicken ( I used 2 breasts and 8 thighs)
- 1/2 cup honey
- 1/2 cup low sodium soy sauce
- 1/4 cup grape jelly
- 1/4 cup hoisin sauce
- 2 tbsp. olive oil
- 3 cloves garlic, minced
- 2 tbsp. cornstarch
