Ingredients
- 6-7 lb Pork Butt Roast - bone in
- 4 Cup Thick Sliced Carrots
- 1 Large Sweet Onion - sliced or chopped
- 5 Garlic Cloves - chopped
- 1/4 teaspoon Ground Pepper
- 1/8 teaspoon Salt
- Pinch of Fresh Thyme (optional)
- 1/2 Cup Water
- 4 Tablespoons Tomato Paste
- 1 (9oz) Pouch Fire Roasted Tomato Progresso Recipe Starters
- Layer onions on bottom of the slow cooker.
- Place pork roast on top of onions and add all other ingredients.
- Cover and cook on high for 7 hours.
- Shred pork with two forks. Remove bone and continue to cook for 30 minutes.
- Serve over cooked pasta or rice. Top with grated parmesan cheese. Salt and pepper to taste.
