Ingredients
6 (4oz each) chicken breasts, boneless, skinless (if breasts are larger, cut in half)
1 (14.5 oz) can diced tomatoes, slightly drained
2 cups baby carrots, whole
2 cups celery, sliced into large chunks
1 cup onions, chopped
⅓ cup ketchup
1 package Lipton Onion soup mix (dry mix)
2 cloves garlic, minced
1 (12 oz) bottle or can of your favorite light beer
Instructions
1. Place all ingredients in the crock-pot except the beer. Pour beer all over the top of ingredients. Cover and cook on high for 3 hours or low for about 6 hours. The cook time can vary based on your crock-pot.
2. To serve: Place 1 chicken breast on each plate and add about ½ cup vegetables and sauce.
