Pot Roast with Jerusalem Artichokes

Ingredients
~2 lbs Jerusalem artichokes (Sunchokes), cut in 1/2 if large
4 medium carrots, cut in 2" pieces
8 oz mushrooms, sliced
1 medium onion, sliced
~2 lbs beef roast
salt and pepper to taste

Directions
Spray crock with Pam or similar. Mix Jerusalem artichokes, carrots and mushrooms together, place in bottom of crock. Put sliced onion on top. Salt and pepper bottom of roast, place on top of vegetables. Salt and pepper top of roast. Put lid on, turn on low and walk away for 8 hours.

Serves 6 to 8, calculations are for 6.
