3 lb. boneless pork roast
1 tsp salt
1/2 tsp black pepper
1 onion, chopped
2 garlic cloves, minced
1 can diced tomatoes
2 cans black beans, drained and rinsed
1/4 cup orange juice
1/4 apricot spread
1/4 - 1/2 tsp cayenne pepper, to taste
season pork with salt and pepper. heat a large nonstick skillet over medium-hiogh head. add pork; cook 6-8 min, browning all sides. Add to crock pot. sauté onions, garlic, and tomatoes in skillet. Then pour sauté mixture over pork along with beans. cook high for about 1 3/4 hrs. Remove pork to cutting board. boiled oj and apricot spread in a small sauce pan over medium heat until reduced by half, 3 - 5 min. remove from heat and stir in red pepper. brush over pork before slicing. serve with beans.
