Lamb Shank with Roasted Veggies in the Slow Cooker

I'm not really a big lamb eater but I like this recipe.
Ingredients:
  • 8 - lamb chops
  • 2 - teaspoons vegetable oil
  • 1/4 - cup white wine
  • 1/2 - cup orange juice
  • 1/2 - teaspoon oregano
  • 4 - cloves garlic
  • 1 - orange
  • Salt and pepper to taste
  • 1 - bay leaf

Directions:
  1. In skillet, brown lamb in oil, drain well.
  2. In a small bowl, thoroughly mix wine, orange juice, oregano, garlic, salt, pepper, and bay leaf. Brush browned lamb with mixture and place in 3 to 4-1/2 quart slow cooker.
  3. Cover and cook on LOW 6-8 hours, or HIGH 4 hours.
