This sounds delicious and simple!

Also, a substitution for vegetarians--there are two companies, Boca & Morning Star, that make a "fake" soy-based ground beef. There are Boca Meatless Crumbles and Morning Star Grillers Crumbles. I use them because I don't eat meat, but my family has started eating them to be a little healthier. When you use them in recipes like this, it's hard to tell it's not real beef (because you have all of the flavors of the other ingredients!!) I've used the fake beef in Hamburger Helper recipes and recipes like this, and my family can't tell--they say it's still a delicious meal, but with less calories & healthier! Just a thought for people who are trying to be more health conscious. :)
