Food Ingredients:
8 ounces precooked chicken, shredded
1 cup long-grain rice
1 cup reduced fat cheese shredded
1 can cream of mushroom (or cream of chicken) condensed soup
3 cups chicken broth
1 bag frozen broccoli, two pounds thawed
Recipe Preparation:
Spray slow cooker with non-stick cooking spray. Place all ingredients except broccoli in the crockpot and stir together. Cover the slow cooker and set on low. Cook for approximately three hours. Be sure to check close to the end of cooking time so that rice stays palatable. Add broccoli and allow to cook on low for an additional half hour.
Healthy Hint: Some like this while on the Weight Watcher's diet. One cup of the casserole is approximately seven points.
