1 1/2 c sliced carrot
1 lg gr pepper, chopped
1 med onion, chopped
2 Tbsp quick cooking tapioca
2 1/2 - 3 lb chicken, cut in to pieces
8oz can pineapple chunks, in juice
1/3 c brown sugar
1/3 c vinegar
1 Tbsp soy sauce
1/2 tsp instant chicken bouillon
1/4 tsp garlic powder
1/4 tsp ground ginger
1 tsp salt
Place vegetables in bottom of slow cooker. Sprinkle with tapioca. Add chicken.
In separate bowl, combine pineapple, brown sugar, vinegar, soy sauce, bouillon, garlic powder, ginger, and salt.
Pour over chicken.
Cover. Cook on LOW 8-10 hours.
Serve over cooked rice.
