Crockpot BBQ Honey Ham and Roasted Potatoes Recipe

1/2 cup ketchup
2 TBSP cider vinegar
2 TBSP dark-brown sugar
1 tsp Worcestershire
1 tsp + 1 TBSP Vegetable Oil
1/4 tsp dry mustard
3 1/2 lbs cooked boneless ham
3 lbs potatoes cut into 1 inch pieces
1 TBSP chopped parsley
1/2 tsp salt
1 tsp pepper

In a small saucepan stir together ketchup, vinegar, sugar, Worcestershire, 1 tsp oil & mustard. Bring to a boil and simmer for 5 min.

Score the ham,making diamond shapes 1/2 inch deep. Place ham in slow cooker and brush generously with sauce.

In a large bowl stir together potatoes & remaining oil. Place potatoes around ham ~ place any leftover sauce in cooker. Cook for 2 hours on high or 5 hours on low, re-covering ham with sauce from cooker once every hour or two.

Remove ham from slow cooker & set aside. Stir in parsley, salt and pepper into potatoes & serve with ham.
