Crock Pot Soup Recipes: Red Bean Soup (Vegetarian)

Ingredients:

3 celery ribs, chopped
2 medium onions, peeled and chopped
2 cans (14.5 ounces each) diced tomatoes
4 cans (16 ounces each) red kidney beans, rinsed and drained
4 cups chicken broth
2 bay leaves
1/2 to 1 teaspoon salt
1/2 to 1 teaspoon Cajun seasoning
1/2 teaspoon pepper
1/2 teaspoon hot pepper sauce

In a 5 quart crock pot, combine the celery, onions, tomatoes and beans. Stir in the remaining ingredients. Cover and cook on low for 6 hours or until the vegetables are tender. Discard bay leaves before serving.
