Ingredients
3 tablespoons Extra Virgin Olive Oil
4 cloves Garlic (finely chopped)
1/2 Small Yellow Onion (finely chopped)
1 Pound Mild Italian Sausage (casing removed)
1 cup Celery (chopped)
1 cup Green Beans (chopped)
1 cup Carrots (peeled and chopped)
28 oz. can Diced Tomatoes
8 oz. can Tomato Sauce
6 cups Beef Broth
3/4 cups Red Wine
Several Dashes Dried Oregano
Several Dashes Dried Basil
Several Dashes Dried Parsley
8 oz. package Cheese Tortellini
Directions
Step 1
Using a medium skillet on medium heat, add olive oil and allow to warm up.
Step 2
Finely chop onion and garlic cloves and add to the skillet, stirring around so they do not burn. Add in sausage (casing removed) mincing it up as it cooks. Once sausage, garlic, and onion is cooked, strain and set aside from heat.
Step 3
Chop celery, green beans, and carrots and place into your Crock pot (slow cooker). Add in sausage/garlic/onion mix, add in a few dashes of oregano, basil, and parsley. Add in diced tomatoes, tomato sauce, beef broth, and red wine. Add a few more dashes of oregano, basil, and parsley if you wish!
Step 4
Place lid on Crock pot (make sure it's sealed) and allow everything to cook on the high setting for 4-6 hours.
Step 5
Turn your Crock Pot to the low heat setting and add the cheese tortellini into the Crock pot about 10-15 minutes prior to serving. Once tortellini has had time to cook, your soup is ready to serve.
