Crock Pot Main Dishes: Sweet Savory Country Ribs

1 large onion, sliced and separated into rings
2 - 1/2 to 3 pounds boneless country-style pork ribs
1 bottle (18 ounces) honey barbecue sauce
1/3 cup maple syrup
1/4 cup spicy brown mustard
1/2 teaspoon salt
1/4 teaspoon pepper

Place the onion rings in a 5 quart slow cooker. Top with the ribs. Combine the remaining ingredients in a bowl; pour over the ribs. Cover and cook on low for 8 - 9 hours or until meat is tender.
